Aegle’s Ambrosia Opens

in Balesin Island Club

Aegle Wellness Center’s signature healthy food restaurant in Balesin Island opened its doors this past weekend to discriminatingly healthy clientele. Named after the mythological food (or nectarine drink) of the gods of Olympus that was said to be their sustenance for immortality, Ambrosia serves delicious food that aims to prolong life by adhering to healthy standards. The driving principle behind the development of Ambrosia and its carefully researched menu offerings is one the three pillars of Aegle Wellness Center’s foundation for preventive wellness; proper nutrition. Healthy food does not have to be bland or unexciting or unsatisfying.

The meals offered in Ambrosia have been carefully put together by Aegle’s nutritionists and medical specialists, and transformed into gourmet food by the magic of Chef Alvin’s culinary talent and skill. A product of Chef Gene Gonzalez’ Center for Asian Culinary Studies and now a senior chef instructor of the academy’s three schools nationwide, Chef Alvin Magpantay developed his passion for creative, healthy food preparation at the École de Cuisine Alain Ducasse in Paris, France. He is currently the culinary consultant for at least three preventive medical clinics, including Aegle Wellness Center, individually providing personalized healthy meals to its clients.

Ambrosia’s menu features well-balanced meals from organic ingredients mostly grown, or caught, on and around the island. In addition to strict caloric consideration and advanced macronutrient balancing, each dish eliminates inflammatory food components such as simple sugars, grains and dairy.

Sounds boring? Wait ‘til you sample our healthy gourmet dishes with names like Organic Island Duck Confit on gluten-free blinis, Seared Tuna and Quinoa Salad, Rosemary Shrimp Skewers, and more. Not to mention our signature drinks and smoothies such as Odysseus’ Overdrive, Gaea’s Goodness, and Poseidon’s Potion. Indulge in all these while relaxing and detoxing in one of the world’s most advanced wellness centers. Ambrosia is situated on the second floor of Aegle Balesin, itself located, like Olympus, on the island’s highest point overlooking the pristine Pacific Ocean.

Fresh tuna steak slices rubbed in select spices on a bed of organic island-grown greens and quinoa, drizzled with zesty Dijon mustard vinaigrette.

Succulent poached shrimp skewered with fresh organic rosemary for rich flavor, on a bed of healthy quinoa and seasonal vegetables.

A novel appetizer featuring duck meat dehydrated to remove much of the fat but preserve its flavor, the dry saltiness balanced with spiced cucumber, sweet hoisin, and cilantro, all on gluten-free blinis baked from chickpea flour.
